Frank is cooking risotto in the galley. It is one of his specialties.
We prefer mushrooms and onion finished with a cup of white wine instead of the broth.

Recipe for 2:
- 2/3 cup Arborio Rice
- 1 cup Chicken Broth
- 1 cup White Wine
- 1 cup Mushrooms
- 1/2 cup Onions
- 1/2 inch end slice from 1 pound of butter
- Olive oil
- Grated Paremsan cheese to taste. We use 1/3 cup grated.
Saute chopped onions and chopped mushrooms in olive oil untill they are tender. Add butter. Melt.Add rice. Mix entire mixture untill rice is coated in butter. Add chicken broth and bring to boil.
Stir continueously untill the liquid is absorbed - turn heat down during exessive boiling. Add cup of white wine and keep boiling untill liquid is absorbed. Add parmesan cheese and stir.
